What a long strange trip it’s been, this Road to the Kentucky Derby.  Thinking back to last September, how many times have we changed our minds, or might there be a few who had an inkling from foaling season?  I’ve had an fascinating but indecisive path myself however, I have finally come to some determinations.  This is what I know about the 144th running of the Kentucky Derby and I would love to share it with you.

Chef Horseradish knows how to make you the hostess with the mostest for your Kentucky Derby bash!  He’s whipped up a tasty desert that is quite similar to the pie associated with the Kentucky Derby.  Horseradish has a recipe with 8 simple ingredients that can be put together and baked in under an hour.  No matter where you watch the KY Derby, everyone wins with this pie.  Let’s see how he does it.

Before he gathers his friends he gathers his ingredients. Regular bakers are bound to have these items on hand. Otherwise a quick trip to even the grocery will just require the purchase of the 8 common and inexpensive ingredients. Butter, sugar, flour, eggs, vanilla extract, walnuts, semi sweet chocolate chips and a pie crust are all that you will need.

It only takes a cup of sugar for this pie. You'll need the rest of the entire bag if your planning on serving Mint Juleps, the official drink of the KY Derby. The pie is great, the drink is, well, not so good. Trust me, you'll be wanting more sugar in those drinks!

There isn't anything vanilla about this filed of KY Derby contenders. What a great group of 3 year-old Thoroughbreds. However, the pie needs a teaspoon to work it's Good Magic!

Bake the pie and…

Churchill’s Big Race Pie

ingredients:

  • 1/2 cup melted butter
  • 1 cup sugar
  • 1/2 cup flour
  • 2 slightly beaten eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped walnuts
  • 3/4 cup semi sweet chocolate chips
  • 9 inch frozen pie crust

Mix in order given.  Pour into unbaked pie shell.  Cover edges of crust with foil.  Bake at 350 degrees for 30 minutes.  Remove foil and bake 10 more minutes.  Cool before serving.

Oh, lucky day!  With just 13 days left on the countdown to the 144th running of the Kentucky Derby there is still so much to consider when choosing a favorite.  With a field of 20 contenders it is still best to wait for the post position draw on Tuesday to make any hasty decisions.  It is a good time to think about all 40 athletes that will face off on 5/5/18.  The Thoroughbreds always capture my attention and imagination but what thought do I give the jockeys?  Having spent time in and around Keeneland’s jockey quarters this spring meet I have paid more attention to their influence.  In this story, I want to focus on two jockeys that will compete in the upcoming KY Derby, the brothers Ortiz.

Happy Friday the 13th!  I am tickled to think of all the peculiar betting habits and quirks I will see among the superstitious gamblers and horsemen at Keeneland today!  Everyday is a good day at the track but tomorrow we will see the very last lap on the Road to the Kentucky Derby.  Saturday, 4/14/18 features the final two prep races, the Lexington Stakes and the Arkansas Derby.

And their off!  Live racing returns to Keeneland today.  This opening weekend of the Spring Meet will feature eight grades stakes races with purses equaling $2.75 million dollars.  The 16 day meet is packed with quality Thoroughbred racing.  I hope many of you get the opportunity to visit Keeneland soon and for those who can not, my favorite race of the meet, the Blue Grass Stakes, will be aired live on NBC Sports Network.  Here is what we have to look forward to at Keeneland this weekend.

It’s a double Derby weekend!  Louisiana has one, New Mexico has one and in just over a month, Kentucky has the Derby to top all derbies!  We are really entering the final stretch as two of the last 10 KY Derby prep races take place this weekend.  Derby, Derby, everywhere a Derby!

Top o’ the morning to ya!  Happy St. Patrick’s Day.  For this holiday, Horseradish, Thoroughbred U’s regular chef, we will be keeping it easy and making reubens.  I love a good reuben and I eat them regularly at Keeneland racecourse and at a variety of Irish themed bars.  Many restaurants add it to their menu for celebrating St. Patrick’s Day.  The sandwich isn’t in fact Irish, it’s all American but it’s all good and a fun and easy way to celebrate the day.  Turn on the television and watch 2 Kentucky Derby prep races and some March Madness Basketball with a reuben, chips and a green frosty beverage.  Horseradish will show you how it is done.
