Racing fans know that the home of the Kentucky Derby is Churchill Downs in Louisville, KY. However, Louisville is also the home of several culinary delights. Benedictine is a Louisville creation. This creamy cucumber combination is credited to Jennie Carter Benedict. Racing returns to Churchill on Arlington Millions Day, 8/13/22. In the mean time, this spread is spectacular to delight your northern friends at Saratoga Race Course’s infamous picnic table areas.

Here is the inexpensive and easy ingredient list:

  • 1 large cucumber
  • 1 package of cream cheese (8 ounces)
  • 1 yellow or white onion
  • mayonnaise
  • salt
  • pepper
  • green food coloring

First, Chef Horseradish removes a pack of cream cheese from the refrigerator. Unwrap it and let it sit at room temp to soften the cream cheese. Read the racing forms while you wait or move on to the next steps.

Next, Chef Horseradish prepares the cucumber. Peel open that program and make some great racing picks. Then peel a large cucumber too. Remove all the scratches from your form and scrape the seeds from the cucumber. Mandaloun is a Kentucky Derby winner but this recipe calls for a mandoline.
